Fuang Vegetarian is a cozy vegetarian in town, established since 2014, and definitely one of my favourites. This is one of the few vegetarians that make me leave with a satisfied feeling, not missing meat. If you can distinguish it, the food in this place is more delicate than in most other places.
The people running it are modest and lovely, they take time to make your dishes fresh on the spot, so it may take a bit of time, but all dishes are fresh and made with care. Not oily, no MSG, not too much salt, pure and nice and as vegetarian as it can be, yet tasty enough. They serve real brown rice and they've got a large menu, mostly with Thai local dishes. No frills, no New Age slogans on the walls, no pretentions, but nice pure food.
They don't advertise the ingredients are organic, but I've asked and most vegetables come from the Royal Project, which could sometimes be organic, sometimes not, hard to check in Thailand, but it's as good as you can get.
The menu states no sugar is used but instead honey to sweeten, as vinegar Fuang uses balsamic, for oil it uses olive oil, no MSG, and they use modest seasoning. I don't know any other place that uses so many pure ingredients and combines it with mastery of cooking.
There are many other vegetarians in town are loaded with MSG, or which use simple corn or palm oil, simple local vinegar and a lot of seasoning.
The wife is a really good cook and she masters Thai cooking skills much better than in other places. I find the food here more pure and tasty than in for example Anchan (pure, but lack of good taste), and Brown Rice (doubtful curries), much acclaimed on other sites.
Fuang is located in a simple little house, in a quiet location near the North Gate.
Highly recommended.
